Tarlant Brut Nature Zero Champagne (2015 Base)

1/3 Chardonnay, 1/3 Pinot Noir, 1/3 Pinot Meunier. The Zero Brut Nature makes up 60% of Tarlant's production and sets the standards and expectations for all of their wines: an emphasis on terroir with no diversion from added yeast or dosage. The non-vintage is generally composed of 60% of a base vintage and 40% of barrel-aged reserve wines. Currently the base is 2010 with reserve wines from 2009, 2008 and 2007. The organically farmed, hand-harvested fruit is from estate parcels in 4 villages (Oeuilly, Boursault, St-Agnan and Celles-lès-Condé) in the Vallée de la Marne.

The fruit is gently pressed and the juice fermented with natural yeasts in temperature-controlled stainless steel vats. The wine does not go through malolactic fermentation. Moved by gravity only, the new vintage is blended with barrel-aged reserve wine and aged sur lattes for several years. The current bottling was disgorged in 2014 (see back label for the exact month) and received zero dosage.
